Trattoria Perilli in the nice Testaccio neighborhood is great. It's a tipical Roman Trattoria. Tables one close to the other and old-fashioned waiters. You have to try their pasta, whetever you like: carbonara, amatriciana, cacio e pepe, with artichoke and guanciale (bacon).
