The lettuce in my salad had brown edges, the potato was tasteless, and the sour cream was watered down. The amuse bouche were so terrible, we didn't eat them at all. Great steak! loved all the little appetizers that came before our meal. i also quite liked the tomato sorbet....

Tasting menu dinner for two with two glasses of house wine was US$230. The food was far from great and certainly not worth the price. Sadly, there is very little else near the Fairmont Hotel and after a long flight we ended up eating here. I would not recommend it unless necessary.

Heard of this restaurant from a friend, so we went with expectation, was not disappointed. The steak was delicious, I highly recommend the sea salt and mustard they offer to go with the steak. The dessert was impressive too. Really has nothing to complain. HIghly recommend!

Firstly have lived in Beijing & Tianjin for two years so I can say what I say ... So the Cut is in the Fairmont hotel so expect pricey ... and yah, these guys say $40-$80 as a range ... way off ... try $40 for an appy and minimum $80 for a steak ... and its a la carte... More

Went there with friends last week and I was completely not impressed as they told me it was best in BJ. Cut here (not by Wolfgang Puck) claim to have USDA top beef but I know Ranger's beef is the same as Morton's serves and it is Auzzie long grain beef and not as advertised.
