I took the introductory pastry training 1 and enjoyed every minute of it. You definitely get your money's worth, knowledgeable instruction in a comfortable atmosphere. I will be back.

I took the Professional Chocolate Diploma program during the winter 2015 session. Overall this is an excellent program. It exceeded my expectations and I recommend it. I thoroughly enjoyed the two day eight hour introductory bread making course. Much information was imparted about technique, ingredients and equipment. It was well organized regarding both space and time. Ingredients were provided pre-measured, such that time was not wasted having students measure the ingredients (perhaps inaccurately?). My mom got me a gift certificate for Christmas and I finally booked it and it was fantastic. Very informative while being entertaining and quick paced. Excellent instruction. I just took the Fundamentals course with Chef Marco this past week. I call myself a "Chef Wannabe" and have taken many cooking/baking courses throughout the years. Finished a thoroughly enjoyable course yesterday where we each built a small English Fruit Cake topped with a pastillage chapel. I was happy to learn a few new techniques that will be very useful in future cake projects. The class size was small which made it a fun learning experience where no question went unanswered.
