So far the best one day cooking class that I ever had in Vietnam. And I'd been trough a lot of this stuff. Very kind people and you can experience the whole thing. From farm to table!

Book it through any hotel, usually just need to book it a day ahead of time. if you already have a hotel or homestay ask them to book it for you. Great Homestay is Magnolia Villa, highly recommended for stay in Hoi An.
