The Chittaurgarh fort, known to be the largest fort in India is worth visiting. It is sad to see the destruction, yet you will be able to feel the might of Rajasthan. Take a guide with you for a better understanding.

Udaipur is more romantic and beautiful place as compared to Chittaurgarh. You can stay in Udaipur and can visit nearby places. You can find hotels here as per your budget

I would recommend Rajashthan Four Wheel Drive to provide guides and driver services for Rajasthan . We went Udaipur to Jaipur to Agra to Delhi. See my Trip Advisor review.
