We toured the castle as part of a vespa tour and we were able to visit the winery and learn about the olive oil production. The views of Tuscany were amazing.

Our entrance to the castle and winery (including tastings) was part of our Tuscany Vespa tour with Tuscany Bikes. Not sure of hours and pricing if going independently
