We stayed in the room overlooking the pool with the balcony and had absolutely no trouble sleeping. My husband is a light sleeper and he slept very soundly. Two of the beach-side rooms are next to the restaurant - this may be noisy but the restaurant closes at a sensible time. There is a beach bar down the beach that opens late - perhaps this is where the noise came from. But let me be clear, Holbox is NOT Tulum. It's basically on a different planet to mass tourism and it's absolutely amazing. Tortugas is fab. We are going back for ten days next year. If you want complete quiet then maybe explore further up the beach (Las Nubes is as far away from the village as you can get) just to be sure. Hope that helps.
