First of all there is a Supermarket directly opposite the appts and another just around the corner. The problem you would have is cooking. There are two electric rings, full stop. No microwave, no oven. I would normally cook us a breakfast once or twice, or maybe do an evening meal at some point, but given the facilities I didnt even try.
Psalidi seems to cover a massive area. There are three restaurants within 200 yards of the hotel, all of them good (Blue Ocean was our favourite). Trip advisors number one for Psalidi is Romeo's which is a ten minute taxi drive from Alexandra Beach.
We used to walk into Kos town. Its around 20 minute walk, no hills, right along the sea front. There are a number of beaches along this stretch, however they are mostly sand/shingle. Obviously once in Kos there are hundreds of restaurants. The 'in thing' out there seems to be cycling, but not sure how practical that would be with three children. There is a designated cycle path right along the coastline.
I did hear quite a few people mention they had jumped on a bus to travel to various places and it does sound as though the bus service is very good out there, even though we didnt use it. The reception at the hotel were very good when it came to advising how to get around.
I'm not sure where horse riding activities are based, or where the good beaches and waterparks are. I suspect that they may be a short drive away. Maybe in your case it might be wise to hire a car for one week to tackle the out of town places and visit the more local areas by foot, bike or bus in the second week.
