Selected this restaurant after reading tons of reviews, and so happy we did!! All the positive reviews are true! Tony looked after us and was a fantastic waiter. The food quality was terrific and presented beautifully! We had a lovely amuse bouche of smoked marlin, and then we each ordered a different shrimp preparation - one Jumbo with garlic and butter, one Jumbo with ajillo and the grilled shrimp with the daily special sauce. The shrimp served are huge, fresh and flavourful. Crisp veggies too! Beautifully plated! Great coconut mint margaritas too. Definitely visit this place - they will earn your repeat business. We will be back next year!! (And we've already shared recommendation to others traveling down here next week). Enjoy!

My wife and I dined at this restaurant for lunch during our visit to Puerto Vallarta. It is not located in Centro or the Zona Romantica, but it is well worth this short taxi ride. The restaurant is small, quaint and has the feel of a welcoming neighborhood establishment. We were greeted at the door by the manager, Arcadio, and a host other smiling and friendly employees. We were seated on the outdoor garden patio and quickly offered menus, water, or any other starting beverage they had to offer. The menu offered authentic Mexican dishes and Arcadio walked us through the options and described things that we were unfamiliar to us in a way that did not make us feel as if we were a burden to him. The margaritas and main entrees were excellent. We had the coconut shrimp and a shrimp dish prepared in Ajillo fashion. In fact, my wife and I agreed without second guessing ourselves that the coconut crusted shrimp was the best we’ve ever had and we have traveled and dined extensively throughout Latin America and the Caribbean. In the end though, we could not decide which was better - the food or Arcadia’s pleasant, welcoming company each time he visited our table to check on our needs. If you enjoy dining like my wife and I do, you will understand how a pleasant restaurant atmosphere coupled with unpretentious, delightful service only enhances the dining experience. … Oh, and I’m not sure you will find a place that provides quality, homemade dishes and ingredients at these prices. So, if you don’t mind venturing off the standard touristy beaten path filled with chain restaurants or local restaurants that sacrifice their authenticity for appealing to the masses of tourists who will want French fries and chicken nuggets, I strongly recommend you dine at Juan Tiburon. You will not regret it.

Juan Tiburón is a restaurant that stands out especially for its ceviche, which is undoubtedly one of Top-rated I have had the pleasure of trying.
The place is small, which gives it a cozy and familiar atmosphere, perfect to enjoy a quiet and pleasant meal.
Since I entered, the staff welcomed me with a smile and a friendly attitude. At all times they were very attentive and were always willing to help me with any questions about the menu.
In my review, ceviche is the Ace of the menu, it is fresh, well seasoned and served in good portions. The ingredients are high quality and the balance of flavors is simply perfect. I recommend it for both lovers of ceviche and those who want to try it for the first time.

Excellent restaurant and one of the highlights in Puerto Vallarta. Super fresh and delicious seafood.
The waiters and team were super attentive and offered us personalized options for their dishes.

This place doesn't look like what it is, it is located inside a popular neighborhood in Vallarta, but the food and service are top-notch.
Tony our host (waiter) is trilingual, super attentive and recommends his best dishes, not the most expensive.
We tried the luxury tuna sashimi and then the traditional shark (burrita) stuffed with shrimp, octopus and marlin.
To finish a homemade carajillo, the delicious cold brew.

Easy to reserve a table via WhatsApp with the restaurant. Identified upon arrival and was offered choices for a table. Orlando was our waiter. He spoke perfect English and answered all our questions about the menu. We started with cocktails and wines (good pours too) and guacamole and chips and the Don Juan Ceviche. Both apps were delicious, but wait… Orlando brought us a bonus… a tortilla chip topped with El Dorado and red spices that was delicate and delicious. The guacamole bowl was emptied during the dinner. No one wanted to part with it. It was sublime. The Don Juan Ceviche is a house speciality of fish and shrimp with watermelon, pineapple, and spices topped with an Avocado rose. Yes, an avocado sliced and shaped into a bright green rose 🌹. Picture perfect. We then ordered the fish of the day, mahi mahi cooked in butter, garlic, and chili peppers accompanied by vegetables and rice and bread baskets to sop up the sauces. For dessert we enjoyed coconut ice cream. Orlando was attentive, professional, and nice. He smiled with genuine happiness. The outdoor ambiance was cool. The space was covered with green vines and leaves that partially hid the iron fencing and street. The dining area was tastefully decorated with Christmas holiday prayer flags. I highly recommend this neighborhood gem. Your taste buds will thank you.

This restaurant has very good atmosphere and music that creates comfort. As for the service is excellent as the waiters are respectful as our tony waiter who attended us and offered a wider view of the dish. The food does not take long to arrive and looks exactly as it should look.

Unexpected delicious and unique cuisine. Simple restaurant with wonderful service and colorful and flavorful food! We had Juan Tiberon ceviche, coconut shrimp and sautéed Mahi Mahi. Lovely presentation and service. Best of all was time spent with owner Lily Gonzales, very passionate about her food and the experience for her guests. Not touristy, but a great place if you visit Puerto Vallarta hotel zone. Thanks Lily and staff for making us feel like locals.

Juan Tiburon is a n amzong feast of seafood , local dishes and drinks. The food was scrumptious. The staff explained and recommended amazing dishes (red smaller, sashimi , etc) that where amazing. I love seafood and this has to be the best place I’ve eaten. Thank you,

Lovely spot! Waiter was friendly and spoke clear English. We had read so many positive reviews regarding the coconut shrimp, we both decided to order it. Came with rice, vegetables and a good portion of Shrimp. The meal was delicious and we felt it was a good price point. We definitely recommend this restaurant! Thanks to Tony our waiter.

Everything was super delicious, we ordered coconut shrimp, I highly recommend it 🫶, the salad they serve is delicious. The mummy shrimp were super large and delicious and the deviled shrimp were also very delicious, the service was excellent from Francisco. We would definitely come again ❤️

During our recent visit to Puerto Vallarta, we had the pleasure of dining at Juan Tiburón, and it was an exceptional experience from start to finish. The service was prompt and attentive, making us feel welcomed and well taken care of throughout our meal.
We started with the guacamole, which was creamy and fresh. The coconut shrimp was a delightful combination of crispy exterior and tender, flavorful shrimp. The tiradito de atún was a standout, with perfectly seasoned tuna that melted in the mouth.
The ceviche de pescado was another highlight, showcasing the freshness of the seafood, its more of a ground fish, different from the ceviche we’re used to. The camarones momia, wrapped in bacon, were succulent and packed with savory goodness. Every dish we ordered was delicious, reflecting the skill and care of the kitchen. The sauces also stood out.

Angel was extremely attentive and described the tiburon options as well as the delicious aguachiles available. We opted for the chitepin aguachiles that was great and how I make it at home. The mango aguachile was a bit too sweet, however easily fixed with the provided spicy sauces. Definitely recommend if you want to experience food locals eat instead of the high priced menus offered in the tourist areas.

The food really lives up to the great reviews. I had the coconut shrimp and it's something I'll be trying my best to replicate at home for sure.
We finally ordered the appetizer of guacamole, as all the other restaurants we'd been to were extremely high priced for this, and it didn't disappoint. So fresh, with delicious tortila chips and was an excellent portion size for an appetizer to share.
Choice of cocktails was great, the drinks we had were deliciously mixed, and the cost was on par with other places we've been in the area.
The restaurant was empty when we arrived and for most of our meal, so we had the full attention of Esteban, who I think was more accustomed to a busier night. All of our needs were met. Only complaint would be that he cleared my husband's beer before it was finished, but only one last sip remained, so not a huge deal.
If we come back to Puerto Vallarta, you can bet we will be back.
