What can I say...every time we eat at Fabio Stivali's Trombolotto hideout of pure delight...we end up having a superb meal. Cannot resist Trombolotto, Fabio masterpiece of culinary invention. We all know that Italy is famed for pastas and the best condiment sauces for spaghetti sauce....but.....he beats them all with his succulent Trombolotto. A friend recommended this restaurant in Sermoneta (where we stopped after visiting the Garden of Ninfa- also highly recommended) and I'm so glad we listened to her. Not only "Il Giardino del Simposio" is owned by Fabio Stivali but also this "Simposio al Corso". Cannot stay away from Fabio's Trombolotto recipe. Came back to this great little place in Sermoneta. Must try the "Trombolotto" (a magical herb & lemon secret seasoning made by Fabio Stivali, the owner): "Tagliolini Trombolotto Bottarga all'Armagnac" & "Campagnola al Pistacchio e visciole" among the rest of the menu. I had the privilege of attending a private dinner party here in November 2013. The owner was gracious and fun. The service was great and the food was awesome. There was plenty of food and it flowed flawlessly. I would highly recommend this place. Can't wait to go back

We came across Fabio's place in our quite random visit to Sermoneta. By mere chance it was open. Fabio, who is the owner of the place, welcomed and took good care of is in a very polite manner. There are lots of places to have a good meal in the little beauitiful medieval village of Sermoneta south of Rome in Lazio. Yesterday a friend and I stopped in here to see if by chance we could get a table without a reservation, not realizing the first place we tried (Il Giardino del Simposio), that was full and had quite a wait, was run by the same family. We had an excellent experience at Fabio's (Owner & Chef) hideout in beautiful Medieval Sermoneta. Description
Historic and charming restaurant in Sermoneta, where you can still eat things simple and elegant on the palate.
