Restaurant 8 is one of the UK’s most progressive dining experiences. Led by Liverpool-born chef Andrew Sheridan of Great British Menu fame and his team, it’s all hosted in the heart of the 8 kitchen. Played out against the backdrop of our bespoke 8 soundtrack, this creates an immersive and exciting dining experience. Having achieved three AA-Rosettes, 8 is also listed in The Michelin Guide, and was named by The Times as one of its top 10 worldwide dining experiences. Michelin remarked that 8 is one of the most unique countertop experiences. 8 can by enjoyed by single diners, couples, or groups of up to 16 people. However, all guests dine together, enjoying the same unique, immersive sensory experience and nostalgic storytelling, which is focused on food, drink and music. We could use lots of big words to describe our food. However, to put it plainly, 8’s food is based on simplicity, quality produce, and – most of all – flavour.

Our visit was good but I had high expectations for Restaurant 8 and sadly wasn’t blown away (especially considering the £500 price tag), however with a few tweaks it could be very good. The initial experience in the “waiting / bar” area is good and the host Hayley very welcoming and helpful. There you can order drinks and enjoy “chefs snacks”. The snacks were very good, especially the tuna taco served to you by the chef. I should say here that Andy Sheridan wasn’t there himself (the two chefs in his place were still very good) however, when paying a peak supplement on top of the price of an extra £15pp this ought not to be charged on evenings where Andy himself is not the chef in my opinion - and diners should be made aware in advance if he is not going to be there. From there you enter the restaurant experience and have the food cooked and served to you. Here is where the concept becomes slightly flawed, the restaurant is billed as an immersive interactive experience but in reality because of the set up of the seats along a long bar only the 4 seats directly in-front of the chef have an interactive experience. Unfortunately we were sat to the far left of the long table and no cooking took place in front of us, even though there were hobs directly in front. This results in some guests having a substandard experience to the rest of the group, although having paid the same. It seems strange to me that more effort wouldn’t be made to ensure an interactive experience for all guests when this could be easily achieved, either by moving guests around after each “ section” of the menu - mains / starter, or simply the chef moving his preparation area before dessert for example. The scallop dish and sea trout were very good. The wine pairing was good, with Hayley picking some fantastic wines to accompany the dishes. Overall with a few tweaks the restaurant could be excellent but the seating needs to be addressed for it to fulfil expectations as an interactive experience.

We didn’t know what to expect but it was an amazing experience from start to finish. Big thank you to Emma who set the high standard from welcoming us when we arrived, during service and serving drinks afterwards and seeing us out. The tasting menu was excellent- I had the pescatarian - although there’s plenty of fish on the “meat” menu as well. It was an amazing experience to be able to chat to Andrew and his team as they cooked and presented the food in front of us. High quality ingredients, simply cooked and served to the backdrop of an unobtrusive soundtrack of music. It is an excellent experience- more than simply eating out. Thank you for a wonderful evening. We hope to return soon.

Wonderful evening at 8. The food was fantastic but the evening was much more than that. The evening began in the bar area where snacks were served. Diners were then lead to the restaurant area where we sat along two sides, watching the chefs preparing the dishes. Everyone was served the set menu together which encouraged discussion and appreciation. The chefs were happy to chat and explain their techniques and all the staff were relaxed and friendly, really making the evening special. The dishes were interesting, tasty and amazing to look at and were made with quality ingredients. We tried the restaurant because we had a Virgin voucher but we will definitely return and happily pay the usual price, as the quality of the menu and experience was more than worth it. A really lovely restaurant for a special evening.

This is an experience, and one I throughly enjoyed. When you arrive you are taken into an upstairs ‘holding bar’ before being taken downstairs to the main restaurant. Everyone is seated at the same time at two separate serving counters, and then each dish is either cooked or finished in front of you. You end up speaking, not only to the person you’re with, but to those seated either side, as well as engaging with the team preparing the food in front of you. All of the restaurant team were so lovely and their enthusiasm for what they are doing is infectious. The food was exceptional. It would be impossible to pick a favourite course as every single one was stunning. Hats off to the chefs. The only minor issue was a lack carbs to balance the menu, and I understand they’re looking at introducing a bread to the menu, which I think it really needs. We went for the wine pairings (£85pp), as did everyone I think, and you definitely want to do this, or you would miss out. All the wines complimented the food incredibly well and the sommelier clearly knows his stuff. To be honest, if you’re not having the pairings, the wine list is very limited and expensive, which may be why it’s not on their website site - think, a dozen bottles, all over a hundred pounds. The wine pairings don’t kick in until you go downstairs, so you will need another drink upstair. I had a cocktail at £18 which was very disappointing. It was very small and I could barely taste any alcohol. One more tiny negative .. the toilets need to be ‘attended to’ regularly. They weren’t dirty, but they clearly were not being serviced as often as I would expect in a high end restaurant. Poor/expensive bar/wine list and unserviced loos aside, let’s be clear, this is an amazing experience. If you’re into nice food and appreciate cooking of this calibre, go for it. The chefs are a delight to chat with, and I very much enjoyed the day. Realistically, you will not be able to do it for less than £500 for two, but it is something special from a culinary perspective.

We had the most amazing experience, and it is definitely an experience rather than a meal. From start to finish the service was excellent. All the food was fabulous. I have never eaten at a chef's table before, and initially felt quite nervous about that concept. However the chef made us all feel very comfortable, and the sommelier was so incredibly knowledgeable but also approachable. There were so many small extra touches that made the whole evening so incredibly special, a night I will not forget. The wine flight is a must.

Absolutely superb. A fabulous creative menu and unique dining concept. The chefs & front of house staff were engaging, friendly & very informative creating a relaxed dining experience with added theatre. We were so impressed we booked a return visit before we left the restaurant.

Wow what an experience, every person in our party felt unique and of interest to the chef. The quality of food and observation of preparation is both intriguing and adds to the experience. The knowledge and attentiveness of the maître de was responsive and informative. Each of the eight courses were packed with flavour taste and blend of textures that enhanced the experience. Wholly recommend so booked in again in July.

A very special experience, Andrew is more than an exceptional chef, his ideas and tastes must be amongst the best in the business, anywhere in the world. My wife and I have done similar experiences in various locations including 2 underwater restaurants in the Maldives and this food was the best we have tasted (couldn’t quite match the view though!). We had a couple of issues with bookings where we had to change dates and Manager Hayley could not have been more friendly or accommodating, and the whole team on the night were extremely knowledgeable, interesting and friendly. Value for money? These events are never ‘cheap’, but when you taste some of the very best food in the world then can you put a price on it? Prepare to be indulged, you will not regret it…

Sorry to be boring but I can only echo the comments of these other 5 star reviews but I think that says something about how consistent 8 is. Hayley was a wonderful host from greeting us at the door in making us feel at home and welcome. The evening began with the chefs serving the snacks whilst we had pre dinner drinks before taking us down to the restaurant area. Here we were sat together at Andy’s magical cooking bench where the chefs literally cook in front of you. Every mouthful of every course was incredible with the expertly combined mix of flavours. You did not feel uncomfortable sitting amongst other guests you did not know and the conversation flowed quite freely stared by Andy and our other chef Pip who were so relaxed in holding conversations and adding a bit of humour whilst they cooked and plated up in front of us. We were so glad we had booked the wine flight and the optional saki with the pre dessert. The chocolates at the end of the meal were a great finish and a nice gesture that Andy thanked all the guests individually before they left. This was a fantastic foodie experience and we hope that Andy and his team win any awards they are up for as they would be truly deserved. Thank you all for a wonderful evening.

Fantastic ambience, small touches and fantastic food. You can't ask for more from an unusual dining experience. The hostess was warm friendly, and knowledgeable about all of the drinks. We had pre-drinks in the trendy lounge beforehand taking full advantage of the different "sipper" cocktails, and unexpected snacks that were provided while we waited to be seated. Each snack was like an explosion of flavours in the mouth - so delicate and yet explicit we wouldn't wait for dinner! Dinner itself was a relaxed experience with a chef per table of 8 who took great pleasure in every dish and explaining the intricacies of them, a mixture of fish and meat for us. All the flavours balanced each other perfectly the the scallop was particularly divine. We took a bottle of wine instead of the wine pairing, which was our choice, and all in all it was a fabulous experience. We would go there again for a special occasion. Thank you for making such a nice night for us. Just one tip though - there is need for tea!

On our three-week tour of the UK from Switzerland we have had a few very good meals at famous restaurants - 8 beats all of them by a mile! It was a food experience straight out of GBM finals, absolutely delicious explosions of flavour, gorgeous presentations and the unforgettable experience of watching our chef prepare it all masterfully right in front of us. This is any foodie‘s dream, so we highly recommend you try it out. Liverpool has a new Nr 1 restaurant, and for sure a Michelin star very soon! Thank you Hailey and Gigi, we will never forget this culinary masterpiece of a meal!

Absolutely faultless in every aspect, food, service, ambience. An informal, immersive chefs table experience. Chef Andy and team explain every aspect of every dish as you watch them be created. Easily the finest restaurant in Liverpool and a Michelin star should surely follow. At the end of the experience, chef Andy personally goes to speak to every single diner, a gesture fantastically appreciated. Can't wait to return and shall be banging the 8 drum to anyone willing to listen.

Extremely warm welcome when we arrived early, very relaxed atmosphere, the staff knew when to engage with you and when to back of. Most of the food was cooked at the table and of the highest quality. The chef explained what you were eating and was presented to the highest standard. The wine selection was superb with really good advice on which would be the best match to the food. I have eaten at restaurants with Michelin stars and this was easily as good if not better than some. Highly recommend the experience if you are looking for an informal, relaxed atmosphere with food and service at the highest standard.

The food was delicious and we loved the experience. Watching the chef (who was very friendly) prepare the meals and answer any questions was very informative and interesting. The wine pairing was very enjoyable too, served by a lovely lady Emma who made you feel very welcome.

I’ll start off with the positives. What a lovely venue; down a few steps and into a modern, relaxed bunker where you are sat at the start and end of the experience. Here the chef snacks and later petit fours were served. Particular highlights were the tuna tostada and cheese & pineapple ice cream cone. Following the introduction you’re led downstairs to the chef’s table. I believe there were 16 covers spanning two tables. Three chefs, two FOH and I think I saw a porter knocking around. The standout dishes was the stone bass - laid upon a tikka sauce and cashew chimichurri. I also have to mention their take on a tiramisu - well baked chocolate sponge paired with a mascarpone mousse came out as a sharing dish and was wonderful. Onto things to improve. The major one was service. It’s been common for me at tasting menus for the last few years to decline the wine pairing, instead opting for a bottle of white and the request to receive a glass of red upon the red meat course being served, usually the one from the wine pairing itself. In the past I have been apprehensive as to whether the staff have forgotten this, only for my fears to be alleviated at the last moment when the glass arrives just as the dish does. Nope, here it was forgotten. Furthermore attention to detail was missing again when my water was topped up with sparkling, resulting in me needing to request a new glass. Finally, I do feel like our position at the table was the worst available. We sat on the left hand side of one of the tables where both FOH and chefs were passing. But it wasn’t where any cooking or plating took place. Some plates were laid out in front of us but these were swiftly moved down the other end. Therefore there wasn’t much interaction available with the chefs. This was a disappointment in what was billed as a chefs tables experience. I caught one of them briefly to remark on the cooking of the stone bass I had noticed from afar but he was clearly wanting to move away to dish prep further down the table. I get it, someone has to sit there but it wasn’t made up for with playing anything our end and in front of me were hobs which could have been used. Other than the dishes mentioned the food was unremarkable, but we would have had a much nicer night if we’d felt more effort was given in respect to our interactions with chefs and our requests to FOH. I have had more personable experiences at restaurants in a non chefs table environment. I would much rather recommend Roski, my only other fine dining experience in Liverpool.
