This Japanese restaurant is WAGYU! We had the €88 5-course menue, enriched by a 6th course, which was lobster. Te owner/chef is actually a creator, someone, who enriches his talent with 28-year experience and drive for perfection. Based on the family business, which is Wagyu...beef raising in Japan and exporing it to top locations globally, chef Oya created this place, which embraces all ingrediences to create a 5-senses experience second-to-none. Each course combines taste,smell, texture/feel, look and touch (on your tongue) with perfection. I assume, each day is getting even better, as Oya strives for perfection, learning, composing and converting ideas into the next perfect dish. The dinner started - after a nice starter - with a very soft Wagyu dry ham, sitting on a crisp chip, accoompanied by a Wagyu-based clear onion soup in a Sake cup. The next was slimly cut Wagyu tartar with a special set of tasty oils and covered with perfectly cut oinions. Next came the lobster dish - with lobster foam and seagrass. Here, I would like to add that each ingredient was prepared separately to perfection. The next course, a char-coal grilled triology of three parts of Wagyu beef, of which each piece was prepared to be perfectly done, allowed us to experience a different taste of each piece. The final course was a 'surprise' ice cream - all courses are combined with very tasty wines, which fitted well. I would strongly recommend to try the 'coffee celebration' - together with the 2nd desert. This is a top location - we will come again - no doubt.
