Had a great 6 course lunch menu. While we are foodies with global “Michelin experience” we were really amazed by the dishes and especially the flavors. Compliments to the chef & his kitchen team. They have potential to get to a 2nd star if it was not for the room setting in our opinion. The blue ocean theme does not do it for us. The choice of staff is also confusing, the relaxed and young style does not sync with the high quality of food. It feels as an attempt to be hip, including the music, but it feels disconnected. We struggled with that experience but loved the food. A balancing act but for us out of balance versus Rich table in San Francisco which is 1* but very balanced style & food.

Second time I ordered Beluga Loves Delivery and I was once again, superb! Ordered the four course meal. We started with yellowfin tuna with noodles, daikon, wakame and citrus. Second dish was a a soup of pear with hazelnut and hazelnut oil. Main course was a juicy blade steak with roasted vegetables and fregola. Dessert was a delicious chocolate treat. As a bonus, we ordered the ‘Russian roulette’ chocolates, one of them containing some spicy peppers. Even though we were not in the restaurant, the experience was superb. The way the restaurant handled the order, the way it was delivered and even the Beluga napkins. The level of detail and care was fantastic. Compliments to the crew at Beluga Loves You! When in Limburg, I like to drink the local wines. So to accompany our diner, I bought a bottle of Muller Thurgau from the Apostelhoeve in Maastricht and a Pinot Noir 777 Barrique 2018 from Wijngoed Thorn. Delicious wines to go with a delicious meal!

We felt very welcome from the first second, sat at a great table overlooking the Maas river and were blown away by each of the 6 courses of the menu. Great wine pairings with some daring wines that worked really well. The young staff were very friendly and knowledgeable. Chef Dani came to our table for a nice chat and gave a tour of the kitchen. Very impressed with the level of cooking and hospitality he sets at the age of just 23. Best restaurant experience in a long time, thanks for a very special evening!

I’ve been many years years to this nice spot in Maastricht with many of my colleagues and business dinners. Unfortunately it’s not the same as what it was couple years ago. I talked with some people who lived their whole life in Maastricht and they told me that this restaurant has a new owner/chef from mid 2019. Since the new owner, there are some changes you will probably notice. The service demand from the staff is far relapsed. Last but not least the taxi what was ordered for us by the staff, was calling and driving aggressive at the same time with one of his colleagues the whole journey to my hotel. Which in my opinion is also not customer friendly. Very sad that this restaurant will be removed from my list when i visit the beautiful city 8 times a year.

Food was amazing and staff very accommodating & friendly. As most of the Dutch wines were new to us, they had no problem allowing us to taste a couple before deciding. The chef, Dani Hoefnagels is very talented and also came out to ask us about our experience and favourites. Special thanks for Lucas Kortlandt as well for the personal attention and his friendly but very professional service. An outstanding restaurant experience!

Supporting local restaurants in these times is important. So when we were in Maastricht, I shortlisted this restaurant for an order. Currently a delivery concept due to the new Corona virus, I decided to pick up the food myself. We had the three course menu, consisting steak tartare, Moroccan carrot soup and cod in papillot. As an extra treat to, we had the selection of oysters and choose the Russian roulette chocolate for an adventurous dessert. The trio of oysters consisting of a Dutch Imperial, Fine de Claire and Wild Atlantic, were very good. The steak tartare was superb. One of the best steak tartare we ever had. Very tasty and every bite was a delight of spices. The same went for the Moroccan carrot soup, although the Moroccan spices did make the soup a bit salty taste. I liked it, my wife found it a bit to salty. But still very good. The cod in papillot needed to go in the oven for 15 minutes and was a free delight. The fish was cooked near perfection and, again, superbly tasty. Our dessert was a very fun experience. Two of ten chocolates had a spicy Mad Dog pepper in them. Now, as someone who loves to eat Thai spicy food I must say that I did not find the red peper very spicy. But still the experience of now knowing if and when you will bite it, was fun. The chocolates tasted very good. All in all we had a fantastic Michelin starred eating experience in the comfort of our holiday home. Great value for money, too. So, without a doubt: five stars it is!

What a superb culinary experience made even more incredible as chef Servais was on front of house duty and he was incredibly generous with his time to chat about the wonderful food we ate. Extremely artistic food, but most important of all, incredibly flavoursome and with a myriad of excellent textures. We have been lucky enough to experience many fine dining establishments and Beluga Loves You is up there with the best. I was driving so unable to drink so the Sommellier matched up some non-alcoholic drinks which enhanced the experience greatly whilst my wheelchair using wife was looked after in an incredible manner. You will struggle to find better.

On the way to Amsterdam we stopped in Maastricht, famous with its gourmand restaurants. The Beluga is one of our favourite. We dined there 3 years ago, when they had only 1 Michelin star and we had an experience when they had 2. They have improved a lot since our last visit. They served special champagne, that you cannot buy at the local license off shop. We ordered a 6 course menu and every course was very balanced and tasty. The timing between courses was also very good and the staff was friendly and attentive. The evening was impeccable. I think, a second star will be coming soon. Sure, we will be back!!!!

After a welcoming reception we started with champagne. The bites that are served are creative and very tasty. A good start for the rest of the evening. The 7 course menu is the way to go as this given an excellent overview of the capabilities and creativeness of Servais Tielman and his staff. Will be back soon. We had a Lactose-free in our party, which we announced upfront, and this was respected and taken care of perfectly.

Literally every part of our experience in the restaurant was amazing. The 5-course lunch meal was exceptional, you could taste the high quality ingredients and see the effort the team put in behind the presentation. Especially enjoyed the pigeon dish, so much so that we literally scraped off all the leftover sauce with the accompanied bread that was one of the best breads I’ve ever tasted. The hospitality was amazing, we felt like we were always kept at the center by the staff, despite the many other guests at the restaurant. The mocktails we had during the meal were absolutely delicious which felt like they were crafted by someone who knows their craft very well. The after lunch coffee segment was an unexpected but positive touch where we were served amazing expresso accompanied by a small tower of delicious sweet snacks. Overall, one of the best fine dining experiences, got my money’s worth and more. For the restaurant staff, if you’re reading this, my wife and I want to thank you again for an amazing experience!

This restaurant is well known in town, with a new owner since a few years and a Michelin star. We visited for second time but prices went up in discordance with the quality of the dishes. Everything tasted more or less the same. The outlook looks quite fine , but the proof of the pudding is the taste. Cannot recommend.

After the nice welcome in the beautiful building where Beluga is located, you can have a quiet aperitif at the bar part of the restaurant before sitting down to a table. The bubbles naturally come with snacks and we are served three of them. There is no lack of originality, as we see a macaron with peanut and pickle, Pai Tee with charfish and chili, and a Marigold egg filled with local mushrooms and cheese. Each one is a flavor bomb and therefore a promising start. We are led to our table in the restaurant hall, with beautiful high ceilings and a view of the water, giving everything a peaceful atmosphere. Chef Servais himself brings the last snack, the Dragon Bread. A kind of popcorn with a nice twist that I won't reveal (this bite is permanently on the menu so be sure to discover it for yourself) - but it does involve liquid nitrogen. In addition to the fun gimmick, another tasty snack. We really start the five-course menu with the yellowfin tuna, a sushi rice cracker and a vinaigrette of ginger and coriander. As a final touch, there is a literal foam of coconut on top. This dish is largely prepared by the hostess at the table for some extra show. As an extra course there is the chef's signature, Wagyu A4. Provided with seasonings such as eel, beetroot, shiitake and finished with caviar. There is a nice story behind this caviar that is enthusiastically explained, which is always fun. The last starter is halibut on a bed of lemon zest, finished with fish eggs. The main course for the occasion is also fish, namely red mullet. A fairly firm fish, which gives it the structure of meat. Paired with variations of cauliflower and an excellent ravioli. Two delicious Iberico-based dressings complete the dish. We skip the cheese and end with a sweet dessert. The coconut meringue from the first dish returns in a more solid form and, together with lychee, pear and hints of chili, forms an extremely balanced dessert. Not too sweet, not too sour, perfect. We drink the coffee again in the bar, and fill the last holes with friandises: a mango cheesecake, a pear tartelet and a small tiramisu cake. I can be brief about the service: it is perfectly fine. The maître also convincingly presents all the wines, all of which are successful combinations. My wife had the juice package and these were also appreciated. Because she is pregnant, she also had an adapted menu, which unfortunately relied a little too much on vegetarian alternatives (this is understandable for a wagyu tartare, but a piece of fish can also be fried better), but that is by far the only downside that I can name here. Each dish is extremely balanced, very tasty, there is a story behind many ingredients and with some show elements the experience is complete. It is clear why BLY has a star on the wall.

We really enjoyed eating out at Beluga, Maastricht. As expected in a restaurant of this stature, the dishes are daring, modern, beautiful to look at, but above all fantastic in taste. We were also struck by the perfect service and friendly, enthusiastic atmosphere. We also received a detailed explanation about the dishes and the wines and very special port served with them. A dietary requirement communicated in advance was neatly taken into account and while consuming my beautifully balanced cheese board, my wife was offered an extra "pre-dessert". All in all, a special, evening-filling experience that we remember with satisfaction and great pleasure.

We had an excellent 6 course meal. Beautiful presentation, very tasteful. Staff was very attentive, making sure all the little details were right. When the staff heard about my dads birthday they added a sparkling fountain candle with the dessert. Very much appreciated. We really enjoyed our evening.

An evening-filling taste experience, taken care of down to the last detail. Upon arrival, sit back and acclimatize in the lounge with a delicious bubble and great and exciting bites. We were then escorted to the restaurant area where there was a nice relaxed atmosphere and the spacious layout ensured that you did not become part of the conversation of your neighbors. The pleasant contemporary ambiance with nice modern beats framed the works of art that came from the kitchen. All 6 courses were spot-on, both in terms of presentation and taste. The wines served with it lifted the dishes to an even higher level and vice versa. The team really pampered us and took care of everything before you even realized you needed anything. The chef served himself and explained his creations; that was the icing on the cake for us. We will be talking about this for a long time.
