場所はオーストラリアのシドニー、セントラルエリアから少し逸れた場所に位置します。 ジャンルはモダンオーストラリアンでして、名前の通り日本人シェフがオーナーさんのお店。 このモダンオーストラリア料理というジャンルの定義は難しいですが、調べたところでは、各国料理の食材や調理法を取り入れた新しい料理との事。 こちらの場合、フレンチジャパニーズがベースのモダンオーストラリアンスタイルです。 こちらはグルメ通に言わずと知れた、以前はオーストラリアで最も予約が取りにくいレストランと称されていた、オーストラリアを代表する一つのレストランです。 過去にはワールドベストレストランで2005~10年の5年連続上位にランクインし、最高で4位を獲得された世界をも代表するレストランでありシェフです。 ただ10年からはランクインされておらず、そのきっかけとして10年にシンガポールに支店を作られ、テツヤ氏がほぼそちらに移行されたという情報があり、現在のクオリティは未知です。 ただ現在でも、トリップアドバイザーのシドニーエリア約4600件中8位にランクインしているトップ評価で、「グッドフードガイド」でも2ハットを獲得されています。 ※オーストラリアではミシュランガイドはありませんが、その代わりとなる「グッドフードガイド」という分かりやすいネーミングの雑誌が発売されており、本国ではミシュラン星ならぬ「シェフハット」という名目で3ランク付けにして発表されています。 シドニーに行くと決めてまず、すぐにこちらのお店を予約しました。 行くと決めたのが約1ヵ月前、予約に不安を持ちながらも翌月の週末は全て埋まってましたが、平日は比較的空いている日もあり、嬉しい事に行ける事を楽しみに当日訪れました。 外観は門から庭があり、お屋敷の様な非常に豪華で高級感のある佇まいです。 店内も同様いくつもの広々とした空間に、まず入口すぐ右にはウェイティングバーがあります。 通路を通ってメイン会場となるレストランに入ると、そこには大きな絵画がたくさん飾られた 和モダンな店内に加え、窓からはライトアップされた素敵な中庭が覗きます。 これだけ豪華な作りのレストランは国内はもちろん、海外含めてもそうないと思います。 席数が多く最初は空いた席もありましたが、平日ながらすぐに満席になりました。 メニューは$230+サービス料11%の一律のみです。 では料理詳細に。 ・Bred ・Rosted Scampi Tail with Vanilla ・Tuna with Finger Limes & Saltbash ・Confit of Ocean Trout, Salad of Celery & Apple ・Base Groper with Sugarloaf Cabbage & Black Garic ・Miso Cured Duck Breast with Sunflower & Leaks ・WAGYU Sirloin with Wild... This iconic restaurant exceeded all of my expectations. We dined on the degustation menu, a true sensory delight the absolute highlight, Tetsuya's signature ocean tribute confit.if you haven't experienced Tetsuya save up and go, you won't be disappointed.

We had the tasting menu. Do have the extra mussels offered(at a price) at the beginning- they are worth it. Interesting menu but don't come here at unless you are keen on fish. Oh what a find! Indulgent? Maybe a little pricey but well worth it!flawless and fancy is the venue, fantastic fusion is the food! I'd recommend the ocean trout and the wagyu. Worth every cent , and with a zen garden to die for!

Tetsuya's serves a ten course degustation menu. The degustation is unique, based on the Japanese philosophy of using natural seasonal flavours, enhanced by classic French technique and utilising the freshest possible ingredients. Tetsuya designed his own on-site "test kitchen" within the restaurant to enable him to create the constantly evolving and inspiring dishes on which he has built his esteemed international reputation.

Tetsuya's offers one of Sydney's most comprehensive wine lists and our sommeliers will, upon request, match the dishes with wine available by the glass.
