Fantastica cena mercoledì scorso. Opted for the set dinner and it certainly did not disappoint. Paired with great service from the Rossini team and it was such a joy to meet the chefs on duty that day. Before stepping into the restaurant, I had already...enjoyed the canapes prepared by the Rossini chefs and served at the Living Room where the lady demi-chef, Chef Yada, whom I have known since her days at the Sala kitchen, was on duty with Chef Oam, and the canapes were delicious, paired with the Fahn Thueng Say Rung (ฝันถึงสายรุ้ง - I Dream Of Rainbow) frozen cocktail curated especially for me by BarSu master bartender Piyapong (Ball)
The starter course, which incorporated goat yogurt (my favorite), was curated by the commis chef, Chef Chalermchai and it fulfilled all expectations. Love the taste of goats milk yogurt and basil pesto with cauliflower - so yummy! When Executive Chef Gaetano Palumbo stopped by my table, I mentioned to him how much I love Italian goat and sheepsmilk products! The pasta course was so delicious, curated by the amazing lady Chef de Partie, Chef Anna, with clams that tasted so fresh with the exquisite seppia al nero which I absolutely love. I had ordered an extra main course, in the form of the vitello alla rossini, a decadent dish of veal medallions, topped with seared foie gras and freshly shaved truffle, on a bed of crumbled sheep's cheese, and this was curated and served to me by the brilliant Chef de Partie, Chef Pranot (Ton)! Chef Ton is also the chef in charge for the SGS' successful Le Petit Chef theme dinners - I have known him to be one of the incredibly talented young chefs to have emerged four years ago from the SGS' main/Orchid kitchen dpwmstairs under Chef Pairit (Bank) alongside his peers (there were four of them altogether at that time - Chef Adisorn (Bird), Chef Pikanet (Petch), Chef Thanat (Nat), and now only Ton and Bird are still at the SGS)
After the absolutely delectable Veal Rossini course, I was served the main course as part of the set which was the Australian sirloin and it was prepared exactly the way I like it, with juicy fat attached to the succulent slices of beef, which Thais refer to as "tid man" (ติดมัน), soo good!! For dessert, I chose the amatika cioccolata, following which Chef Anna appeared with a colorful plate of pralines - what a treat!
I also love the ambiance of Rossini's with jazz music playing on the sound system and starting at 18:45, live piano music by the pianist from the Jazziam band, Khun Jittawat Wattanabode (Golf), on Wednesday evenings. I personally feel live music accompanies the Rossini dinner experience very well indeed
It is always such a joy to dine in at Rossini's and meet the team - the chefs, including Chef Anna, Chef Ton, Chef Eye, Chef Yadda, Chef Chalermchai, Chef Lookkaew, Chef Tar, Chef Oam, et al - all brilliant chefs under the tutelage of Rossini Senior Sous Chef, Chef Sayan. And on this occasion, it was also a pleasure to experience the excellent service of the Rossini team on that Wednesday evening - Yok, Jack, Pla, Rachen, and Rossini Senior Venue Manager, Khun Sumeet Suwanno. The flavors of each dish were superbly correct - it was as if they knew my preferences when it comes to Italian cuisine.
