There are mixed reviews of this restaurant. Sushi Hyo consistently ranked in the top restaurants of all different cuisine and probably one of the top 3 Japanese restaurants. Visited Sushi Hyo for a business lunch. Excellent Japanese meal, courses well-timed to keep the lunch moving. Fully - and fairly - priced. Excellent service. Not one weak moment or course. Very solid, indeed.

For two people, the bill came out to nearly USD 400. Not only was it severely over priced, the food was horrible. I would not even pay USD 15 per person for that meal. The ambiance was good but on a July day - a little too hot inside. Service was simply impeccable! Attentive, friendly, warm. Sushi was just ok. And for the price I would expected to be 'wow'd'. Stunning Sushi. The variety of sushi was amazing with not a piece of salmon in sight. Each piece of sushi was expertly prepared by our sushi chef (with an impressive knife) and served to us piece by piece. Sushi Hyo is hidden away in the Somerset Palace Hotel. The multicourse meal including soups, sushi, abalone and more was just amazing. Many different tastes and textures. Great service. It was an enjoyable and relaxing evening.

Most people focus on the fish when it comes to sushi, but the key to a good sushi is getting the balance just right between the rice and the fish. Been to Sushi Hyo twice and it does not disappoint, as an authentic Tokyo style sushi restaurant. The fatty toro was spectacular as was the uni (skip the rice and have it served in a little bowel).
