We highly recommend you try Flame at the Four Seasons Vail; we had a great dinner from Flame’s in room dining. With COVID, Flame has had its challenges but Chef Simon from the Four Seasons Denver and the whole team has triumphed. First of all,...our dinner arrived in our apartment on time and hot, delivered with everything we would need. We started with the seared foie gras. It was a very large lobe that we could share. Many restaurants serve foie gras but Flame’s presentation was creative and delicious with the wild mushrooms and the brioche bread brushed with duck fat and toasted. We had asked Jose Ortiz, the Food and Beverage Director to choose a wine for us and he chose a Rioja by Muga. It went beautifully with our meal. We both ordered the double lamb chops, one rare and one medium. They were each perfectly cooked, just the way we like them, as well as tasty and juicy. All of the sides that we ordered hit the spot; particularly the truffle fries that were cooked as we requested—very crisp. The asparagus were the best fat ones and the wild mushrooms were delicious and prepared with a sufficiently different sauce so they were distinguished from the ones that came with the foie gras. The pièce de résistance, at least for Audre, was the Valrhona Chocolate Soufflé. It came ready to be popped in a preheated oven and a lovely note with instructions from the Pastry Team. When it was cooked for the prescribed 16 minutes, it came out puffed and perfect. The taste of the Valrhona chocolate is beyond delicious and Audre couldn’t believe she ate the whole thing!
