Sampled the Mexican menu items over several months. The homemade salsa is excellent for my taste; other dishes are as expected --- the main selection, re-fried beans, Mexican rice, and a small salad. Service is attentive and quick. A convenient neighborhood restaurant. Did not try the mixed drinks.

We were on the way to Colorado Springs from Denver Airport. We were very hungry - thank goodness we found the Las Fajitas! We had good food at reasonable price. The free salsa and chips alone made our visit worth while.

We like this place a lot and eat here at least 2-3X per month. We have little girls and Las Fajitas is a very accommodating, relaxed and easy place to go with them for a sit-down type of restaurant. My wife and I stopped here with our 14 month old son because we wanted something fast that wasn't fast food, and most Mexican restaurants get you your food quickly. This place was no exception. Nice little local place in a shopping center location. I like their chicken enchiladas Sometimes the service is not the greatest. Last time we were there, I asked for a premium margarita, and never got it, in spite of reminding the waitress twice. All in all, good for a quick bite if you are not too picky.

Typical Colorado style Mexican Restaurant, nothing to complain about but nothing to rave about either. I had the tortilla soup and a chicken tostada. Visited this restaurant on a Saturday evening. First time here. A great find. Alfonso (Poncho) was absolutely a great waiter. My wife and I both ordered the carnita fajitas. Excellent! Had the chicken fajitas. For a place called Las Fajitas, I would expect the fajitas to be their signature dish. The chicken was over cooked and dry. The tortillas were very tough. Las Fajitas is a great restaurant here in Castle Pines. We are so fortunate to have such great food just up the road. We go just about every week - it's a new tradition. Now if only I could branch out from the amazing Fajitas!
