MICHELIN Guide: Good cooking
Surrounded by the Médoc vineyards, this contemporary restaurant is nestled in an outbuilding of the Château Marquis de Terme (a Grand Cru classified in 1855). It boasts a terrace that opens out onto the estate's pretty garden courtyard. Under the stewardship of Grégory Coutanceau, who devised the menu, chef Thibaud Guena welcomes his guests with fresh, modern cuisine that is very much of its time and shuns unnecessary frills. The appealing wine list features almost 600 labels, including a selection of Bordeaux reds and prestige wines available by the glass.

The main dining area on the first floor (upstairs) overlooks vineyards adjacent to the chateau. The room is spacious, modern and airy. Exposed oak beams soar high above the diners. A cube in the center of the room, defined by an open framework of transparent shelves, displays a dazzling collection of crystal decanters and vases, each holding identically hued red liquid, not quite the color of wine but visually interesting. Tables are widely spaced and comfortably sized. Our lunch (supreme de volaille) was expertly prepared and served at a reasonable price. There’s an excellent wine list. We were very happy with the wines that were available by the glass. Altogether, a lovely experience.

With the “Menu of the week” (€33), you can enjoy excellent dishes and enjoy very good vintages (especially by the glass).
The setting is very nice and the decoration is soberly very stylish!
We're verging on perfection! CONGRATULATIONS!!!
But the service is downright deplorable, which is particularly surprising and almost unacceptable: it’s like a low-end brewery that is not consistent with the great cuisine and pretty setting:
We pour you the wine like water, it runs in all directions, we deposit the plates like bowls, all with comments that denote and spoil our pleasure yet great.
If we had taken the menu at 86€, it would have been a real scandal!
Must see again for the next seasons!!!

Very elegant restaurant, with very attentive and professional service. The dishes are well executed with very good raw materials, but the soul is missing a bit... you are satisfied but something is missing. Prices higher than average, somewhat justified by the service and extra tastings served (amouse bouche and small pastries). Important and extensive wine list, but with mark-ups a little too high. Pleasant but you don't leave happy.

The setting remains exceptional, the service very pleasant but this time the meeting was not on the plate. The beef on the menu was more than tough to the point that my daughter asked her father to cut it...she's 13! The dessert taken off the menu by the gentleman had to be subject to a supplement and was billed in full...not very classy. Perhaps the large number of place settings that evening and the large tables did not allow us to maintain what we had found during a first visit... that is regrettable. We thought we had found the HQ of great opportunities.

The website is perfect, the image conveyed by the chef’s biography is reassuring. You can imagine an almost gourmet restaurant waiting for its star. In short, excellent marketing and com work. Unfortunately the disenchantment is severe because many points are not up to par, including one – which we will detail – particularly serious, concerning dessert.
First disappointment: the rank chef (a little too familiar and confident) makes us taste an excellent Cheverny that can accompany our foie gras. The (absent) sommelier apparently encouraged him to sell a lot. We choose him, but he teaches us that he has none! Bad joke from the sommelier? Bad coordination? It doesn't start well. A Chablis will do the trick.
So here we go with the foie gras. Excellent and fine, unfortunately ruined by its accompaniment: a French toast that sweats any oil and makes the pleasure of foie gras disappear, and a bread that wants to be “country” but stale of at least 3 days and chewing so difficult that it ruins the pleasure of foie gras a second time... The cheese plate will also be served with the same stale bread...
The dish, the yellow place with caramelized leeks, candied lemon marmalade and almond milk sauce will be the only step without Rating. Excellent according to a unanimous review.
The affair is getting serious for dessert. If “the peanut” is perfect, the dessert called “La Pêche” is literally inedible. And it’s not a question of taste but of the horrible feeling of a damaged product, both rancid and bitter. All the guests had the same sickening reaction, bordering on vomiting. The component in question is "Greek Yogurt Foam". We hope the pastry chef doesn’t have that horrible image of Greek yogurt!
The most likely cause, but it is even more serious, is a damage due to the heat (very strong that day), a kitchen-laboratory upstairs without air conditioning adjacent to the toilet... And therefore the lack of precaution of the pastry chef or his Trainee. Another argument in favour of heat damage: the peach placed on the “Greek yoghurt” mousse had time to soak up the same horrible rancid taste and was also inedible, while the scoop of yogurt ice cream (normal!) and tarragon (placed at the last moment of course) was excellent.
Let us add to be honest that this dessert was “offered” to us by the house, a kind of implicit recognition of the serious defect found...
In conclusion, a very pretentious house, which wastes its possibilities (seen through a few successful dishes) by promoting the sale at any Award of a marketing image and the development of a real restaurant chain, doubtless very profitable, but whose question is how a single chef, however exceptional, can monitor the quality in each place!

Merci

My wife and I visited this restaurant, encouraged by the many fine reviews and expecting a good experience. Unfortunately, that was not to be. Initially things were fine. Our server was pleasant and attentive, and we chose some starters and decided to have the same lamb dish for our main. The sommelier guided us towards some very nice wines (by the glass) to have with each course. The starters (foie gras for my wife and rare tuna for me) were good, but not particularly special. It was the main dish that was rather a disaster: a lamb shoulder (overcooked to the point of being barely cuttable) and a chop, the latter also extremely overdone, without a hint of pinkness. The sauce was bland and tasteless, the vegetables limp and overdone.
We struggled through it (although a patron at the neighboring table, evidently experiencing the same thing, sent their meal back). We did express our dismay at the end of the meal to the manager when he asked how everything was. Every place can have an off night, and perhaps that’s all it was, but it was easily the worst meal of our two-week stay in France.

We went to this restaurant for a “special” dinner at 145€ per person (including wine).
We found a staff that was not at all at the desired level: too familiar and obviously very (too) happy with him.
The dishes are remarkably presented, very appetizing dressage. On the other hand in terms of taste big disappointment because the finesse is not there.

First experience in this restaurant as part of the operation mentioned in the title.
We are both curious, we are delighted to only pay for every other meal, the big question being is the proposed menu worth the 83€ displayed or is it worth around forty euros?
Unfortunately, like past experiences (all at the restaurant in another department), the menu offered is not at all worth the price displayed.
Big disappointment, dishes neither good nor bad, without soul.
Lots of uninteresting things: appetizers, accompaniment to foie gras, accompaniment to duck breast, sweet treats. The scallops and the pina colada stand out a bit from the crowd. The tiramisu is gross.
I don't understand the restorer's objective?
Demanding customers like us will not come back.
And customers not used to gastro/semi-gastro will not pay that price for that.
Positive points: the location and the interesting wine list

The service seemed a little rushed. We are asked if we should carafe the wine and at the opening of the bottle we say ‘no debate’ and choose for us. The lamb mouse was a little dry, a spoon was missing to use couscous semolina and a presentation of the cheeses served would have been welcome.

New Year's Eve dinner on the 31st, the setting is pleasant and modern. We found the service average despite the relaxed friendliness of the waiters and waitresses...
We were left on our table throughout the meal:
the glasses of champagne for the aperitif, as well as the salt and pepper, all the corks.
The bread was not good.
And when my husband asked for vodka, he was served in a whiskey glass not shaken, and when he asked for the Armagnac menu, the waitress told him "ah you want the dijo menu" not very classy . Progress to be made, we won't go back.

Some false notes that spoiled the pleasure of this excellent meal... We ordered a bottle of wine, specifying that it will also serve us as an aperitif. The waitresses brought us the two starters but the bottle of wine was desired... The sommelier, obviously very busy chatting with other customers and carrying dishes (there was no crowd and I don’t think the waitresses really needed it), came to carry us the bottle well 15-20 minutes later...
The bread was stale, cut way too early I think.
However the dishes (tuna starter then beef and lamb dish) were excellent.
In short a very good restaurant but not worth the Award...

Excellent service, very pleasant butler, a good sense of humor, friendly sommelier and very competent. Nice frame. Fine dishes. Nevertheless we found the Quintessence menu a bit expensive when we compare to other "gourmet" restaurants where we go.

We discovered this table during a family lunch for a birthday.
A very nice discovery.
The “Retour des Vignes” menu at €46 is really very good. The dishes are tasty and elaborate. The service is good and quite efficient. The wine list is beautiful and the sommelier's advice is relevant.
We also had children's menus which were truly beautiful cuisine suitable for gourmets in short pants.
They were offered games and coloring.
We had lunch in the beautiful upstairs room but we are already looking forward to coming back to have the pleasure of discovering the terrace.
In addition, a “Market Return” menu is offered for around €30.

An unforgettable moment around high quality dishes in a magnificent location! The chef plays with flavors and textures with a masterful hand. The choice and quality of the products are perfect. Wisely recommended food and wine pairings.
The welcome and the work of the staff in the dining room are impeccable.
Special mention for the dessert “sesame” which plays on the cooking of this small seed and which combines elegantly with lemon cream…. A wonder!!
Thanks again to Mr. Coutanceau and his team!
