Widely known as one of the top restaurants on the island, this hilltop oasis did not fail to impress. We were picked up from our West End hotel by Sherman who chatted with us during the drive to and from this newer boutique hotel perched...high above the Roatan tree canopy with a gorgeous sea view. Here we were met by Carlos who arranged arrival drinks (martinis made with freshly crushed local watermelon) and a tour of the property while we watched the sun set over the aqua sea. A few drinks in we were escorted to our table on the patio surrounded by the sounds of nature and the gorgeously lit grounds. We chose the 5 item chefs tasting menu which was an absolute delight. Opting for a seafood focused dinner we started with a silky cauliflower soup, followed by the addition of the fried ceviche from the a-la-carte menu which we simply could not skip over ordering. Definitely try this, it was unique and a delicious departure from a traditional ceviche that comes out more like a lightly breaded sphere filled with fresh fish and tangy vegetables. Next was a cassava causa loaded with avocado and topped with octopus served with a stellar beetroot purée. Next, a large serving of jumbo prawns coated with a crispy oatmeal crust over a blackberry dipping sauce. Following that was the most well cooked and melt in your mouth tender fresh-caught sea bass. Finishing up the fish course was local lobster in a delicate cream sauce with a spear of fried cassava. To end an already divine meal, we were served a trio of desserts including flan, crème brûlée, and a molten chocolate lava cake. The night we visited, the sous chef was in charge and ran her kitchen like a well-oiled-machine. She came out table-side with every course and, using Carlos as a translator, provided details on all the dishes. In small breaks between courses we were able to stop by the open-air kitchen and watch the kitchen team preparing our meals and explaining various questions with big smiles and clearly showed a love for their art of cooking. By far, this was the best meal we had on the island. It’s certainly a splurge as the 5 item tasting menu is US$90 per person but we’ll worth it to spend a night above the trees in a botanic garden like setting.
