What is a Traditional Buchon?

Hello,

So I'm researching restaurants to try while I'm in Lyon, and I came across this one called 'Le Bouchon Des Filles'-

It seems to have gotten good reviews, so I'd like to try it. One note about this restaurant that I've seen when reading more about it is that it's not the most traditional of buchons. So my question is- what are the qualities of a traditional buchon? And if you've eaten at Bouchon Des Filles, what makes it less traditional than other buchons? I'm curious. Thanks!

Buchon means a cork among other meaning including a traffic jam i.e. Blockage. What did you think buchon meant?

Stuart : just to complete your (mis) information !

Apart from being a cork or a tap, un bouchon is a Lyon restaurant, a goat cheese, a Caterpillar cocoon, a Réunion dim sun, a card game, a term used in rugby, a line-trop (electricity), a stub (computer science) and a brush for horses.

Pousser le bouchon un peu loin : to exaggerate

C'est plus fort que le jeu de bouchon ; it is extraordinary

Faire le bouchon :to dance on the water (barge)

Prendre du bouchon : to age

etc..........
