We are touring the south island extendively with a 3 year old who is just potty trained

Are there restrooms along the way that I can get to in a jiffy?!

We don't tend to use the "rest room" title but any cafe that serves alcohol must have a public toilet. All shopping centres will have facilities. You should not have too much of a problem. You don't have to be a customer to use any of these. Sometime the quality is not what it should be but most are quite clean.

many of the DoC rest areas and public freedom camping areas have a toilet. most are hidden from view, but can be found, and signs indicate where they are.

On Highway 73 through to Arthur's pass for example, can be found at Castle hill, Cave Stream, Craigieburn, Lake Pierson, Klondike Corner, Greaneies Flat and at Arthur's Pass.

You will pass many DoC sites, the sign at the entrance will indicate if camping is permitted, if so, they usualy have a toilet. Become familiar with 'The long Drop'

Most roadside cafes have nice clean toilets. Obviously you should be a customer but most will understand the needs of a 3 y-o! Service stations tend to be a bit less understanding but you can usually get by with an ice-cream or an extra $20 worth of petrol.
