We had heard of Los Dos by friends who had visited Mérida previously and had certain expectations but Chef Mario exceeded those expectations. His close partnership with Chef Jeff, his own cultural knowledge and love of the cuisine results in an experience like no other.
My husband and I had the great fortune of taking the Taste of Yucatán class. It was a wonderful way to spend a day. Chef Mario educated us on local ingredients, took us to the local market to buy ingredients, and then instructed us on the preparations of classic Yucatán dishes. Best of all, we got to enjoy the fruits of our labor.
We enjoyed learning to make corn tortillas, salbutes, panuchos, pumpkin seed dip, soup, green rice, pickled onions, and pollo pibil. At the market, we were able to buy spices and we were given copies of the recipes. We are set to try making everything at home. Chef Mario is a wonderful instructor and asset to Los Dos. I look forward to taking another class with him in the future.
