The concierge at the William Gray hotel recommended Chez Delmo to us during a recent business trip. It was within walking distance from the hotel on a peasant spring evening. The food was terrific and our waiter was both completely bilingual and very attentive. Turns out he is the son of the owner, who came out late in the meal and spent time with us. He was genuinely interested in our opinions and described how he prepared several of the meals we had. If you take nothing else from this review, remember to try the lobster bisque. It is, simply stated, unbelievably good. Takes three days to make, and the preparer has to extract the essence of the lobster flavor from the meat by hand over several hours.
