Socca is a traditional dish from the Côte d’Azur region. A crepe made from chick-pea flour, oil and water, it is cooked in a hot wood-fired oven.
The couple who work the oven at the Marché Forville in Cannes are run off their feet making Socca non-stop while the market is open. There is often a queue of up to a dozen people waiting. The crepe is quite big, so serves four. Nevertheless, you might have to wait up to 15 minutes before yours is ready. This isn’t really a problem, as it’s quite entertaining watching how it’s made and served.
Your quarter of Socca is served in paper, sprinkled with pepper. Slightly crunchy on the outside and smooth on the inside, it is very tasty. I would have gone back for more, but didn’t want to wait again.
For €2.50, it’s a great snack.
