Walking the ‘via’ less traveled through Cortona and came across this precious eatery. Eatery is a word which does no justice ... the ambiance is charming, the wine list extensive, and the menu is no less than perfection.
The young Proprietario, Franco, and executive chef, Emanuele, have been open for just 20 days. How can this be? Symposio looks and feels and tastes like a restaurant that’s been on the map for years. Franco serves as well as manages, and his manners are impeccable and friendly.
Whatever is happening in the Kitchen Laboratory is nothing short of art!
I asked for a recommendation for a deep and heavy red, and was offered a Syrah, Tenuta Montecchiesi Selverello ... so, so delizioso.
Pappa al Pomodoro as a starter was a surprise because the English translation said ‘tomato soup’ - anything but! It was more of a terrine of tomato, sun dried tomato, spices, and breads.
My main course was the Young Pork, violet potatoes and Bronte pistachio. The pork was excellently prepared, with just enough crisp on the fat to have a heavenly taste of bacon! The violet potatoes were puréed into a smooth and tasty pillow for the pork to sit atop, with the Bronte pistachios sprinkled lightly - not overwhelmingly - over the dish.
Happily I can say ‘I will be back’ ... with two more weeks in Cortona, I’ll have the opportunity!
