Coming specifically for the vermouth is a pleasure reserved for Manhattan, negroni or my grandma's liquor cabinet. The space is compelling, something between a beach house in the Hamptons and a garden party. Interestingly a knowledge of of botanist Sir Joseph Banks is a reference of reverence to the great man and eludes to a cornucopia of local ingredients like crunchy carrot, radish and cucumber swooshed through sasame yoghurt dotted with pepper leaf oil... but its sweet tang of muntrie jam balances the chicken liver pate. Its not the Hungarian variety that i grew up with but alongside the pickled shards of turmeric covering grilled prawns its a big Wow. My snapper has a wild fennel vinaigrette which adds oomph to accompany the femme's choice of glazed duck partnered by glazed plums.
We split the trio of caramelised pear and rosemary cake, colourful trifle and chocolate mousse that has a spectacular mandarin granita finish.
This is a fine concept. Dont wait too long
