I'll just get the negative part out of the way first:
We went on a rainy day and were supplied with plastic raincoats to stay dry which was fine through the markets but we got wet and cold on the boat from the rain and the wind. Once we got off the boat we got back in a car only to drive a short distance and get on another rowed boat which we waited about 5 minutes for in the pouring rain so we were soaked and shaking from the cold by this point. This would have been a wonderful experience on a dry day but it should be whether dependant. I would rather miss out on the boat and arrive warm and dry.

Apart from this, we enjoyed our experience. The market tour was educational and it was nice to see that they picked out fresh ingredients. We cooked a large range of food with some great demonstrations which made our job easier. There is an endless supply of passionfruit juice which is a nice touch and they teach you how to make rice milk at the beginning of the experience. Overall we enjoyed ourselves and were impressed with the food.

Thuan Tinh Island Cooking Tour was awesome. Our guide/teacher Trang was wonderful. She is a friendly young lady with very good English, excellent communication skills and lovely sense of humor. Pick up was on time, we joined other participants (total 12 persons in our group) and then we were given shopping bags and headed to the busy market. Trang picked all the ingredients and while doing this she explained how to pick perfect pineapple and fresh shrimp. We got to know all the aromatic greens and smell them. Really helpful for later when we go grocery shopping. The shopping bags were then collected and we boarded a boat for 35 minutes and then another small boat for some of us but for others including me she wisely advised us to go on a van. When we arrived at the cooking school in the village, there were several tables each set for 6 people. Our group had for that had all utensils needed including a small stove. Each group had their guide/instructor but we did not feel their presence once we started.
Trang then demonstrated the old way of making rice milk, and then let several of us give it a try. The cooking class then flowed beautifully with Trang explained each of the four dishes in a clear and simple way, with lots of tips and DOs and DON'Ts then after each demonstration each member of the group will go to their place and do it while Trang supervised everyone and was quick to respond to calls for help. When we finished and as Trang was explainig the next dish our long tables were cleaned and new ingredients placed for the next dish. So it was highly organized and efficient.
It amazes me that with the right ingredients and the right technique all of us adults and children with different cooking skills managed to make delicious and beautifully presented dishes. This is all thanks to Trang's excellent tips.
We had a great time cooking and eating what we cooked. And it was a very delicious meal because the ingredients were fresh from the market and we ate each course just after cooking it. There was plenty of refills of passion fruit juice all along. And we had pineapple sliced for dessert. She gave us printed recipes so we can cook the dishes again and also a cutting tool as a gift.
Not to be missed if you visit Hoi An.

Thank you very much to Trang for a great morning! After a whizz round the market with a quick crash course on Vietnamese herbs and how to buy shellfish, we made our way by boat to the breezy and well laid out cooking school. We made fresh shrimp roll, crispy pancake, beef noodle salad and beef pho. Really tasty and hope to recreate when I get home - if I can find the many Vietnamese herbs!

I can't recommend this course highly enough - the whole experience is so well organised from shopping in the busy food markets to having all of your ingredients ready and waiting at your cooking table Ramey to peel off from the chef demonstration to go and cook your very own Vietnamese dishes. Our chef was Trang, beautifully spoken English and highly skilled at helping you understand the small nuances like how leaving your garlic and shallots too long would ruin the dish or making the shrimp into smiley shapes! She even made further encouragement for you to listen carefully, by testing you on how many spoons you needed and playfully judging the outcome as to how well you might make it as a chef yourself!
Trang took us through the stalls in the market, telling us of the different types of herbs and vegetables, letting us smell he aromas, explaining the best kind of shrimp and whether they were fresh or how to tell which is the freshest pineapple. Shopping in the supermarket back home will be different from now on!
There's a boat ride to the island which allows you or appreciate the rural area, then an even smaller boat takes you through the coconut plantations to the cooking school.
This gives the time for your freshly purchased market produce to get delivered separately and for them to be prepared for cooking.
Everyone has a table set with a stove, chopsticks and a pan and it's off you go!
What is amazing is that with the right ingredients and being taught proper cooking skills you end up with a set of four most delicious dishes that would honour any top kitchen in any capital of the world!

We booked this by email but please be aware you will pay cash, no card facility. Luckily we’d visited an ATM the night before! After hotel pick up you start at the central market where the fruit, meat, bones, shrimps, herbs, noodles and vegetables are purchased. This was an assault of scents, colours, noise and flavours and a brilliant experience. Then into a boat which chugs you up the river and transfer to a small rowing boat (not a round boat) for the final arrival at the cooking school. We ground our own rice milk in an antique device (this was used later in a crispy pancake) then used Vietnamese utensils and made four different dishes and dipping sauces which we ate as we finished cooking them. It was all absolutely delicious.
