Stopped in for an appetizer and a drink. The design of this building is really cool, very open with a kind of communal feel, without communal seating. The cheese plate was beautifully arranged, and although it wasn't the cheese, I had one of my most interesting bites from our Chattanooga trip at the Flying Squirrel. As an accoutrement on the cheese plate there was a slice of watermelon radish with hydrated mustard seeds. The mustard seeds had a briny, caviar like flavor and the bite reminded me of vegan caviar. Really interesting, unique and enjoyable. Our server was awesome and even went back to the kitchen to investigate what kind of edible flower was on the cheese plate. Yarrow. The smoked salt to pair with the earthiest cheese on the plate was a nice mix too. Thanks y'all!
