This was our Best mean on the island
Wonderful food excellent service and an awesome bottle of wine
Constantly a fiat class experience

We had the tomatoe salad. Perfect

For entrees
I had the lamb 2 ways. It was tasty and cooked to perfection bit a small portion

My girlfriend had the alpacapaca This was to die for. The best piece of fish ever. The simplest of crust and cooked to perfection.

We eat bulletproof. No gluten and no added sugar this was possible at Merriman’s

We spent the earlier part of the day driving around Hawi, then through Waimea to Waipi'io Valley, and on our return through Waimea, stopped in 30 minutes ahead of our reservation. They sat us without delay, and spoiled us through the entirety of the meal. We were on the island to celebrate our anniversary; I'd noted that in our reservation. They wished us happy anniversary as we sat down, gave us complimentary prosecco with our appetizer, and then comped our dessert as well.

We learned so much from our server throughout the meal – the origins of the restaurant, the relationships with local farms, the restaurant's approach to sustainability – all while having plenty of time to ourselves to savor our food.

There wasn't a wrong note with any of the dishes. Our meal started with the best cocktails we had the entire week we were on the island. If you've never had a Merriman's Mai Tai (also served at Monkeypod Kitchen in Maui and Oahu), it's a must: no other mai tai comes close. We loved the tasting flight of French wines as a nice way to sample several, but still be OK to drive back to our hotel on the coast.

We split a goat cheese salad as an entree; I had the Monchong w/island prawns (that night's special), and my wife had the Island Filet Mignon. The beef was flavorful and tender - none of the chewiness that we'd been told to expect from local beef. The molten chocolate purse was a unique take on a lava cake, and the nightcap waimea coffee was a great take on an Irish Coffee.

We wished we could have returned – our only complaint was that our hotel was 30 minutes away and we were worried about the drive down the mountain after a full meal / drinks. So grateful we made the trip though – this meal was one of the highlights of our trip.

The restaurant is unassuming on the outside, and you can easily drive right by. But should reserve and plan for this one! it's hopping inside. Busy and energetic scene any time of day, interesting mix of patrons locals and tourists. However despite the high energy level, it is a fine dining experience and lives up to high expectations of anyone wanting white tablecloth, fine food (some traditional, some more experimental - in a good way), great service, excellent wine list. In summary, you will come out of the dinner and wonder why you didn't eat here every night on the island instead of some overrated hotel restaurant that is trying but cannot quite get there. Merriman's will impress. Do reserve & come early.

This was about our 30th visit to Merrimans. The food was good as always and the service was pleasant.

This time we were highly surprised to receive the bill at the end of the night with an automatic gratuity for the kitchen staff, with the expectation for us to also tip the waiter.

There was also a note from Peter Merrimans on there saying “DO THE RIGHT THING”. We have traveled a lot and ate at several high end restaurants and I am pretty sure the world standard is that the owner of the restaurant pays the kitchen and the guests be expected to pay the waiters.

We asked the manager about it and he just said the owner wanted to get the kitchen more pay during the busy times. It seems like the owner should give a portion of revenue to them if he is concerned with doing the right thing.

Anyhow, just a FYI to expect that on your bill and just curious if anyone else has experienced that around the world.
