Buffets can go downhill fast but Ichiban is not one of those. I was incredibly impressed with the quality and the selection of the sushi on the buffet. I did not get the feeling that this was an operation geared toward profit at the expense of the customer. The options were fresh and delicious and not over-riced! While the sushi options are great, the hot buffet is slightly more limited than some of the other local buffet options. This doesn't mean that the hot buffet is bad - just that it's a bit limited. What they did do, they do well. I did not have room for desert but the food was really great!!
